I have a food allergy to wheat, which is a good and a troubling thing. As a college student, it's difficult to find recipes that are healthy and gluten free, however, I've discovered that there is STILL a way! I want to help you as much as I can with that--whether this dietary change is by choice or other restriction. :)

Below is a Caprese Salad. It's made of sliced tomatoes, sliced mozzarella (yum!), basil leaves, and balsamic vinaigrette. I don't like too much balsamic but of course, add more than this! It's a healthy alternative, gluten free, and is a little change to the typical salad. It's also great for college students since it doesn't need much prep time.

This whole thing filled me up but it also serves as a fantastic appetizer! Stay tuned for Christmas baking and more gluten free options for the holidays. :) Mangez bien!
